Cashew Milk Was The First
Last year I set out to make more foods from scratch rather than buying store brands that contained more ingredients than I wanted. Google was great for finding recipes for cashew milk, however, I wasn’t happy with the outcome, so I created my own.
The recipe I am about to share took about a month to perfect. Each week I would start with a base and would add or omit ingredients. Finally, my perfect cashew milk was created.
A Little Tip: When looking for my ingredients, I try to find the product that is closest to the whole food. For example, if I want dates, I will find dried dates in the produce section rather than dates that are wrapped in plastic and have added sugars found in the aisle section.
The Products I Love
– Fisher’s Nuts usually have cashews with no other oils, such as peanut oil on them.
Cashews are a great source of protein.
– The dates I find in the produce section. Usually, those hidden in the snack isles will have added sugar.
Bard Valley Natural Delights is one of the better dates I have found. Zero pesticides, zero additives, and no added sugar. Dates naturally sweeten the cashew milk along with giving it added antioxidants, iron, and fiber.
– The cinnamon and nutmeg, I use McCormick Gourmet Organic brand.
Cinnamon and nutmeg are great for different vitamins and have anti-inflammatory properties.
– If by chance I can find a local honey producer, I will buy the local honey for the allergy benefits local honey has. If I am unable to find local honey, I will find the best honey I can find on the local store shelves. There may be a little research involved on my phone.
Honey is fantastic for seasonal allergies, and is an anti-inflammatory food with antibacterial properties.
Everything I Need
Blender
7 Cup Mason Jar
Mason Jar Lid
Strainer or Cheese Cloth (Only needed for blenders that can’t liquidize the nuts.)
Ingredients:
1.5 Cups Cashews
5 Dates
2 TBSP Raw Honey
1 TSP Cinnamon
1 TSP Nutmeg
The Recipe
1. In the mason Jar add all the ingredients together.
2. Fill the mason jar to the 7-cup line with water.
3. Add lid and shake, making sure nothing sticks to the bottom.
4. Let the mixture sit for 2-4 hours
5. Dump all the contents from the mason jar into the blender.
6. Blend on high for 5 minutes. (Certain blenders such as the Pampered Chef Blender has an Alt Milk button.) For those blenders that do not have an Alt Milk setting, blend for about 30 seconds for the first two minutes, then blend on high for the remainder of the time.
7. *Dump the contents of the blender into the 7-cup mason jar, chill, and enjoy!
* If the contents are still nutty, put cheesecloth over the top of the mason jar and dump contents from the blender into the jar. The solid particles should stay in the cheesecloth.
When I use my Black & Decker Blender, I use a fine strainer instead of a cheesecloth.
